In the first place, let’s take a look at the wedding cake as it stands in tradition. In the first place, fruit cake was usually used, which, because of its long shelf life, could be decorated over a week or more. These days, with carrot cake, chocolate cake, and red velvet cake, the decoration ends up going much more quickly.

Let’s talk about what kind of cake suits you. Are you someone who loves the rich, decadent taste of chocolate, or do you adore the bright vibrant contrast of red velvet cake next to pure white frosting? Perhaps you love the sweetness of white cake with frosting that has a deeper flavour.

How would you like the cake to be decorated? One great way to get a cake that looks terrific is to have one decorated to the theme of your wedding. If you have a beach wedding, for example, why not have the decorator decorate the cake with seashells and starfish made of meringue or frosting on it?

When you are ready to look into a modern wedding cake that is going to represent your union, take a look around for ways to personalize it. Do you have any text that really reflects your relationship? Why not have it inscribed on the tiers of the wedding cake, along with your name.

Edible ink has been a great gift to the wedding cake industry, allowing wedding cake designers to print amazing pictures onto the cake for you. Is there a certain picture of you and your beloved that you adore, or is there an image that has some sort of special meaning for you? The range of color and detail that you can get is amazing. Take some time and think about any designs that you might care to put into the cake itself.

One of the things that the bride is going to put a lot of time and effort into is the design of her dress and the design is one that a good decorator can copy on to the cake. Does your dress have lovely sleek lines, or have you decided on something more dramatic? If you want a personal wedding cake, having it mimic the design of your dress is a good way to start.

If you are in a place where you want a cake of any sort, don’t forget that you are not stuck with plain old butter cream frosting. Look around for some modern innovations like chai spice frosting, champagne frosting, cayenne pepper frosting and coffee frosting. The options are endless!

You do not need to become a pastry cook to make beautiful cakes, you really need the know-how and practice. Of course, the appropriate equipment will go a long way in your cake decorating endeavors. Listed here are a couple of hints you might like to try.

3. Try a stencil for a greater decorating appearance. Or you might prefer to dust your cake with powdered sugar as an alternative to icing for a cleaner appearance.

4. Your cake will stand out if you use edible decorations including nuts and candy. It is a simple and beautiful decorating technique. Simply push them slightly into the icing before it sets.

5. Small cardboard comb that is available in any baking supply store could be used to apply a textured look on your cake decorating.

6. Piping is achieved by using a pastry bag fitted with a metal tip that is held on by a coupler. It is your primary instrument for cake decorating. Using it, you can create words, flowers, and other shapes on the top and sides of the cake.

7. Fondant is a smooth white paste, is used in complicated cake decorating. Fondant is kneaded and rolled to cover cakes with a shiny smooth layer of icing. Fondant is less tasty than butter cream, but the cake will appear sleek and stylish.

One type of chocolate cake that is sure to receive rave reviews is terrific Black Forest Cake, an old-style recipe which originates from Germany. The following chocolate cake recipe and tips will provide you and your family or dinner guests with a confection they’ll soon not forget.

The Recipe for Black Forest Chocolate Cake

Cake Ingredients:

One half cup of softened butter;

One and one-quarter cups of sugar;

Two eggs;

One and one-quarter cups of all-purpose flour;

One-half cup of unsweetened cocoa (powder form);

One-half teaspoon baking powder;

One teaspoon baking soda;

One teaspoon of vanilla;

Three-quarters cup of buttermilk;

Cake Filling Ingredients:

Two cans cherry pie filling;

Three cups of whipping cream-chilled;

One-quarter cup of confectioner’s sugar;

Shaved milk chocolate to garnish the cake;

Tips and method:

1. First preheat oven to 350 degrees Fahrenheit;

2. Line a nine inch cake pan with non-sticking paper;

3. Using an electric mixer beat butter that has been softened by allowing to stand at room temperature and sugar together until fluffy in consistency;

4. Add one egg at a time, mixing well after each egg is added.

5. Next add sifted flour, cocoa, baking soda, baking powder and buttermilk. Mix well until batter is smooth with no lumps.

6. Pour the batter into the lined cake pan and bake in pre-heated oven at 350 degrees Fahrenheit until middle is set. Approximate bake time is forty-five to sixty minutes. In order to determine if cake is done insert a toothpick in its centre. It should come out fairly clean with only a few crumbs. It is important that you do not over bake Black Forest chocolate cake.

7. Once the cake is cooled take a long knife that is serrated and cut the cake in three layers, equal in size. Tip: The cake will be easier to cut if you keep it in the refrigerator for two to three hours.

Prepare the cake’s filling:

1. Take a colander and drain cherry pie filling in order to remove most the heavy juice.

2. Beat the whipping cream adding confectioner’s sugar until thick.

3. Shave milk chocolate using a vegetable peeler. Place the shaved chocolate inside the refrigerator until you are ready to assemble the cake.

Cake Assemblage:

1. Place the first layer on the serving plate.

2. Spread approximately one fourth of the whipping cream on the initial layer and add half of the cherry filling on top of the cream.

3. Add the cake’s second layer spreading one fourth of the cream on it plus the remainder of the cherry filling.

4. Add the cake’s third layer and spread another one-fourth of cream to the top and apportion one fourth to the cake’s sides. Press the chocolate shavings gently onto the cake’s top and sides.

Tips:

• If you use three cake tins for the layers as opposed to one the bake time needs to be reduced.

• Using traditional cake flour instead of all-purpose flour will make your chocolate cake much lighter and fluffier.

• If you do not have cherry pie filling, you may substitute jam.

Everyone loves chocolate cake; hand here is a fun recipe to make a Halloween cake that looks like a bat. It’s not hard to make, it starts off as a simple Chocolate Victoria sandwich cake but it is cleverly cut and put together to look like a bat.

Ingredients

2 tbsp cocoa

3 tbsp boiling water

225g/8oz soft margarine

225g/8oz caster sugar

4 eggs

225g/8oz self-raising flour

2tsp baking powder

For the Filling and Topping:

Strawberry jam

50g/2oz soft margarine

175g/6oz icing sugar, sifted

1 tbsp milk

A bar of Cooking Chocolate

Method

1. Preheat the oven to 180C/350F/Gas 4. Grease and base line 20cm / 2x8in sandwich tins with greased greaseproof paper.

2. Blend the cocoa and water in a mixing bowl then leave to cool slightly. Measure all the remaining ingredients into the bowl and beat well until thoroughly blended. Divide the mixture evenly between the tins and level out.

3. Bake in the preheated oven for about 25 minutes or until well risen and the tops of the cakes spring back when lightly pressed with a finger. Leave to cool in the tins for a few moments then turn out, peel off the paper and finish cooling on a wire rack.

4. To make the butter cream, blend together the margarine, icing sugar and milk until smooth. Keep one of the pieces of sponge cake whole to form the base. Spread a thin even layer of jam on the cake base, and add half the icing and spread this out over the top of the jam.

5. Take the second piece of sponge and with a large round pastry cutter, cut a circle in the middle of the sponge. Now cut two more circles, one above and one below the centre hole. The two big cake halves left form the bats wings, stick them on top of the base of the cake with the scalloped shaped edges sticking outwards. (See picture at link below)

6. Take two of the three circles that were cut away when making the wings. Stick the two circles together with jam and icing and stick them in one of the triangle shapes between the wings to form the bat’s head. The final circle should be cut in half and stuck with icing above the bat’s head to form the ears. Bats have large ears you know.

7. Melt the cooking chocolate in the microwave for a couple of minutes – stirring half way through. Melt the cooking chocolate in the microwave for a couple of minutes – stirring half way through. Spread the chocolate evenly over the bat’s wings, head and ears. Give the Bat a face with some icing and red jelly sweets for spooky eyes.

This lovely bat cake makes a great centrepiece to any table. It will look as if you have spent hours slaving away to make him but as you will know, he was rather quick and easy. Just watch the slices of cake fly off the plate!
